Thanksgiving Side Dishes Your Family Will Gobble Up

Sautéed French Beans with Vanilla Spiced Truffle Oil is a simple recipe with complex flavors that will dazzle guests. This recipe gives a French twist to standard green beans by enlivening beans with shallots, white truffle oil and Madagascar Bourbon vanilla. Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract provides the same outstanding flavor and high quality as its traditional vanilla extract, but features only certified organic and Fairtrade ingredients. The Carrots with Lemon Dill Butter recipe below allows home cooks to elevate simple carrots with nothing more than cupboard staples. Nielsen-Massey Pure Lemon Extract is added to clarified butter, salt, white pepper and fresh or dried dill for a light splash of citrus that will stand out and enliven the whole meal.

Sautéed French Beans with Vanilla Spiced Truffle Oil
1 pound mélange de haricots, trimmed and rinsed (may substitute with fresh green beans)
1 tablespoon minced shallot, set aside
1 tablespoon white truffle oil
1 teaspoon Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract
1 tablespoon butter
1/2 teaspoon organic garlic powder
1/8 teaspoon chipotle chili powder
1 tablespoon butter (optional)
kosher salt
freshly ground black pepper

Directions
Heat oil in a large non-stick skillet over medium heat. Add beans, sauté for about 6-8 minutes. Add shallot and vanilla extract; sauté until shallot is tender. Add garlic powder and pepper; stir to coat. Sauté until beans are crisp-tender, about an additional 5-7 minutes. Add butter; stir until melted and season to taste with salt and pepper.

Serves 4 to 6.

Carrots with Lemon Dill Butter
1/4 cup clarified butter
2 teaspoon Nielsen-Massey Pure Lemon Extract
2 teaspoon Minced fresh dill, or 1 teaspoon dried organic dill
1/2 teaspoon salt
1/4 teaspoon white pepper
1 pound carrots, sliced

Directions
Whisk the clarified butter, lemon extract, dill, salt and white pepper in a large bowl. Add the carrots to the butter mixture and toss gently to coat. Place the carrots in a preheated large sauté pan. Sauté until tender-crisp. Serve warm.

Note: Clarified butter is melted, and white milk solids are skimmed of the top, which allows the butter to be less heat sensitive and reduces the risk of burning.

Serves 6 to 8.
